Cauliflower Pizza

Our favorite recipe by far is this cauliflower spinach pizza. Only 4 net carbs
per serving!!!

The Crust:

  • 2 cups of riced cauliflower
  • 1 large egg
  • 1 cup of Parmesan Cheese (Freshly Shredded)

Toppings

  • 6 oz of Rao’s Pizza Sauce
  • 1/4 cup red onion or 1/2 tsp of onion powder for lower carbs
  • 2 cloves of garlic
  • 1 oz black olives
  • 2 oz Quattro Formaggio cheese
  • 1/2 cup of fresh spinach
  • 1 Tbsp chopped fresh basil
  • 1/4 cup of cherry tomatoes
  1. Preheat oven to 400ºF
  2. Shred cauliflower in the food processor or use a grater to shred manually.
  3. Place cauliflower in a skillet for 10 minutes to remove all the moisture.  Make sure it is dry.  Allow to cool for 5 minutes.
  4. In a large bowl, mix egg and Parmesan cheese then add cauliflower to mixture.  
  5. Use your hands to press dough to form crust onto a baking sheet lined with parchment paper.
  6. Bake dough for 20-25 minutes until dry and golden.  Remove from to prepare for toppings.
  7. Spread the pizza sauce across the dough and add, onion, garlic, spinach and olives to the crust. Top with cheese and basil. 
  8. Return the pizza to the oven. Bake 400ºF for an additional 10 minutes.
  9. Slice into 8 pieces.   Enjoy!

    Serves 8.  Macros per serving: 4 grams Net Carbs (6 Carbs minus 2 Fiber) 14 grams Protein, 11 grams Fat.  190 Calories
